Salmon Salad

Salmon Salad

Pan sear a filet of wild salmon, place it over a bed of fresh spinach leaves, add fresh strawberries, avocado, almond slices, orange slices, goat cheese, a raspberry vinaigrette dressing and top it off with some Wasabi.

Fruit Parfait

This simple dessert is great tasting and a healthy alternative. Mix blueberries, strawberries & watermelon with Kefir or low fat yogurt and ENJOY!

 

Turkey & Black Beans - Family Recipe from Spain (serves 2-4)

Wild Ground Turkey - brown in a skillet with 1/8 cup of Virgin Olive Oil. 

Add 1 large whole onion - cubed.

Add 1 large green pepper - cubed.

Stir in 1/2 clove of garlic - chopped.

Add 1 tsp. medium black pepper.

After cooking all of these contents, add 1 can of black beans, heat and serve.

As a side dish, use watermelon as a nice cool contrast to the hot turkey and beans.

 

TV Snack

Freeze some grapes and snack on them while watching a movie (they're much better for you than chips and dip). But remember, everything in moderation! Grapes do contain a lot of sugar so eat them sparingly.
